The Top Kitchen Must-Haves (These Will Save You Time)

I thought moving from our townhouse to our new house would impact what items we regularly use in the kitchen. Our new place is bigger than our last. So, I figured more counter-space would mean more new, easily accessible kitchen gadgets at our disposal. 

But actually, having a kid in the house is what impacted what items we use most in our kitchen. 

First up, the Cuisinart toaster oven.

How did we LIVE before we had this thing?! Seriously I will never go back to a regular toaster again. You don’t even know how fast it can cook dinosaur chicken nuggets on a Tuesday night when you’re running late and you’ve GOT to get your toddler fed and in bed before  the waterworks start. 

My second “kitchen must-haves” item are these storage containers from Bed, Bath & Beyond.

Adding another human to the evening routine means everything has to happen fast. Having the staples (whole grain pasta, brown rice and salt) for 20-minute meals on the counter and easily accessible makes everything that much quicker. Plus, H likes to help by taking the tops off.

My final kitchen favorite is this cookbook, Fun Fast. Cook Fast. Eat Slow, by olympic athlete, Shalane Flanagan.

My cousin bought it for me as a Christmas present and it has the best healthy (and quick recipes). Because you can’t eat chicken nuggets every night for dinner…even if they are organic.

So, I want to know, what are you favorite kitchen must-haves? What do you use every day? Or what did you think you would use all the time but haven’t even taken out of the box? Sorry Instapot, maybe one day it’ll be your time to shine!

3 Makeup Products I’m Loving Right Now

In my family, I am the makeup queen. For all my southern girlfriends, I’ll pause for a second so you can clean up the coffee you just spewed all over your keyboard reading that sentence.

It’s crazy, I know. Because I am actually NOT a makeup queen. I leave my house without foundation regularly. The other day, I realized I was using a contour brush as a blush brush. Or maybe it was vice versa…

But when your sister is a commercial fisherwoman, one cousin is a boho photographer/world traveler who packs her TP out of the woods and the other is an Ivy League grad (sorry to stereotype) then I am the expert.

So, a few weeks before Christmas (when the family all gets together) I brush up on my “expert” makeup skills by watching a couple Jaclyn Hill videos and taking a trip to Ulta. This way, everyone looks #flawless at midnight mass. Plus, I secure my spot as grandma’s favorite grandkid (you hear that, Clayton?).

Without further ado, here are my 3 favorite makeup products I am loving right now:

  1. Victoria’s Secret plump me up lip gloss. So this is a never-say-never scenario. I NEVER buy the little trinkets by the checkout register. But I was in Victoria’s Secret the other week and the line was long and slow. And my lips were really chapped…so I bought it. What I love about this lip plumper is that it’s clear, doesn’t have sparkles in it, yet it has a SUPER high shine. I have had trouble in the past finding a completely clear gloss because most seem to either have some color in it or sparkles. Not this one. It was $12 and I wear it at least 3 times a week so totally worth it.
  2. Colour pop eyebrow pencil. This was a recommendation from Rachel, who works at Ulta. I went in to get a lipstick but her eyebrows were so perfect! I had to ask what products she used. Normally the employees always recommend the expensive stuff – Anastasia, tarte etc. But not Rachel. She took me straight to the colour pop section for this $5 gem. As Kim K. would say “I’m obsessed”.
  3. Hempz age defying body moisturizer: ok I know technically this isn’t a beauty product but it makes the list anyways. Last year I turned 30 and noticed I have wrinkles by my eyes now, even when I’m not laughing. This year, I turned 31 and now I’ve got them on the corners of my mouth. So, why NOT give the age defying lotion a try? Prior to finding this at TJMaxx, I was using Aveeno. It really is great for dry skin, but Hempz lotion feels equally as moisturizing and I like the smell.

I figure most of you showed up here for a foster kid update. However,  we aren’t expecting a placement until January. And even I can only come up with so much to say on that topic. So instead you got this makeup post. It is a lifestyle blog, after all. But don’t despair! There’s a silver lining. Now you know what to buy for the 30-something woman on your Christmas shopping list. You’re welcome.

Healthiest Cookie Recipe Ever

I’ve seen cookie recipes where honey is used in place of sugar, avocado is used in place of butter and oats are used in place of flour however, I haven’t found anything that incorporates ALL of these substitutes.

Since I’m pretty adept, I figured I would give it a whirl. My very scientific question: if you sub all the processed ingredients for healthier alternatives, can you still get a decent cookie? The answer is yes.

Healthy Cookie Recipe Ingredients

– 2 c. oats

– 3/4 tsp. salt

– 1 tsp. cinnamon

– 1 tsp. baking powder

– 1 ripe avocado

– 1 ripe banana

– 2 eggs

– 1/4 c. honey

– 2 tbsp. peanut butter

– 2 tsp. vanilla

– 3/4 c. dark chocolate chips

Healthy Cookie Recipe Instructions

Heat oven to 375.

First, place 2 cups of oats on an ungreased cookie sheet and toast but don’t burn (about 15-20 min).

Then, place ONE cup of the toasted oats along with salt, cinnamon and baking powder in a food processor (I use a ninja) and grind into a fine flour-like powder.

Next, mash avocado and banana with a fork (make it smooth – no chunks). After that, put in bowl and with an electric mixer, and blend with 2 eggs, 2 tbsp. peanut butter, 1/4 cup honey and 1 tsp. vanilla.

Slowly add in flour-like mixture.

Stir in the SECOND cup of toasted oats and the chocolate chips. For the record, I didn’t add walnuts but I’d throw those in next time, too.

Grease cookie sheet (I used a spray coconut oil). Use a big spoon or ice cream scoop to form the dough into cookies on the sheet. Make sure to flatten them out a little so they aren’t balls because they won’t drop like other cookies.

Bake for about 17 minutes.

Remove from the oven and enjoy.

Healthy Cookie Nutritional Value

Recipe makes 18-20 cookies.

Nutrition per cookie (using My Fitness Pal recipe creator):

97 cal/13.5g carbs/2g protein/4.5g fat

Extra Notes

Next time, I will sub the 2 tbsp. peanut butter for 1 scoop of peanut butter flavored protein powder to try and boost the protein intake a little.

As mentioned previously, add walnuts or chopped pecans to give the cookies some crunch!

Lastly, if you aren’t a banana person, try using 2 mashed avocados instead of 1 avocado and 1 banana. For my cookies, I used a banana because I was worried the cookies wouldn’t be sweet enough. For the record, they were fine, and I like the taste of banana, so it worked for me.
